Celiac Disease
People with Celiac Disease, cannot digest gluten. There are debilitating long time symptoms associated with this problem. A blood test lets you know if you have Celiac. Gluten is the protein in certain grains like wheat, barley, kamut, spelt, rye, malts and triticale. Oats possibly also. Gluten is what makes dough elastic.
If you eat a gluten free product, you will not be getting the grains mentioned above, and will avoid Genetically Modified wheat, barley, rye etc. Other grains and rice are substituted to make bread, pancakes, and other gluten free products.
Hypoglycemia
Hypoglycemia means low blood sugar. About one person in ten has this condition. It can occur at any age but is prevalent from 21-60. Some people are born with hypoglycemia. Others develop it in time. The pancreas, liver and adrenal glands are overworked and thus become inefficient in maintaining proper hormone balance. Anxiety and Stress can start a low blood sugar cycle, and low blood sugar can trigger anxiety and stress.
